Mexican Stuffed Bell Peppers
- Cut a bell pepper in half and clean out the seeds inside.
- Stuff the pepper with cooked strips of chicken.
- Top the chicken with salsa. Add some corn, if desired.
- Bake at 350 degrees for about ten minutes, then add white cheddar cheese one top.
- Continue baking for another five minutes, until the cheese is nice and melty.
- Take out of the oven and top with a slice of avocado and a sprig of cilantro.
- Enjoy!
