Recipe: No Sugar Added, Oaty Pancakes

Do you ever have one of those days when eggs alone just aren't going to cut it? Every once in a while, you just want some pancakes! Unfortunately, pancakes aren't exactly the healthiest breakfast foods.

This recipe is picky tested, so it's perfect for the family's Sunday morning brunch! Added bonu: there's no added sugar to bog you down in the morning. Extra added bonus: they'll never know there are flaxseeds in the mix for some omega-3's and fiber!
  • 2 ripe bananas
  • 1/2 cup oats
  • 2 eggs
  • 1/2 tsp baking powder
  • 2 tbsp flax seed
  • 1 tbsp ground cinnamon
  • 2 tsp ground cloves
  • 1 tbsp vanilla
  • dash of salt
Mix all ingredients in a blender until smooth. Pour about 3/4 cup of mixture into well greased frying pan and cook over medium heat until bubbles form and pop on surface of batter. Flip carefully, as the batter is very thin. The first few may take some trial and error, but I just kept the ugly pancakes for myself and gave the nice ones to the picky eater. Regrease the pan with coconut oil between eat pancake. Serve with fresh fruit!
