Cashew Pesto
- 1/2 cup fresh basil leaves
- 1/4 cup olive oil
- 1/4 cup cashews, soaked
- 1 clove garlic, chopped
- salt and pepper to taste
Add all ingredients to blender, and puree until smooth.
Mix in to your shrimp, chicken, or vegetables for some healthy fats and antioxidants!
