Recipe: Baked Jicama Fries

Are you missing French fries with your lettuce wrap burger? Try out some jicama fries to get a lower carb option! Jicama is full of fiber, vitamin C, potassium and other nutrients.

  • Preheat oven to 400 degrees
  • Peel and cut jicama into sticks. (Be sure to peel well. Jicama skin is an organic toxin)
  • Boil the jicama in a saucepan for eight to ten minutes, or until they start to soften.
  • Drain the water and toss the jicama in olive oil and your favorite spices. A lot of people like paprika, but I'm partial to a little Old Bay. Rosemary and garlic is also delicious.
  • Spread the fries out on a baking sheet. Bake for about 30 minutes, or until the outside is crispy.
  • Let cool, and enjoy!
