Recipe: Protein Pumpkin Bread

I love pumpkin bread around the holidays, but struggled to find a recipe that wasn't ridiculously dry and dense or actually tasted like pumpkin bread. You can use whatever protein mix you would like, although you may need some baking powder to get it to rise.


1 c protein pancake mix (I used Birch Benders, but there are lower carb options)
1 c canned pumpkin
1 tsp vanilla extract
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
2 tsp granulated stevia
1 egg
1/4 c walnuts
1/4 c dark chocolate (optional)

Bake at 350 degrees for about 30 minutes, or until a toothpick comes out clean. This made about two small loaves.
